Update Espressif Examples

Description

Updates Espressif examples to work with latest ESP-IDF V6, new chip targets, and more.

Works best with #9242 , #9231 , #9225

• Adds support for Espressif (not yet released) latest ESP-IDF v6.
• Removes duplicated code files in examples: time_helper.c, wifi_connect.c (now needs WiFi in #9242).
• Improves default settings to work on more devices.
• Adds more robust SM (Shang Mi) wolfsm support.
• Addresses ESP-IDF v6 Syntax Highlighting. See ESP-IDF v6.0 Intellisense error: invalid value gnu2b in -std=gnu2b.
• Fixes VisualGDB requirements. See Espressif ESP-IDF 5.5 Requires Python 3.9 or newer.
• Expands ability to set wolfSSL more configuration from idf.py menuconfig: the Kconfig updates.
• Introduces a new components/wolfssl/ld/region_peek.ld linker helper file for memory diagnostics.
• Adds named support for ESP32-C5 and ESP32-C61 chip types. (HW acceleration currently disabled).
