docs: finalize the v10 to v11 migration guide and add an OpenRewrite recipe - #2469

…recipe The guide lists the migration steps, the type moves, the changes that need manual work, the Appium 3 minimum server version and the removed deprecated commands with their `mobile:` replacements. The recipe fixes the package moves and flags the usages without a replacement; it was verified with the Gradle and Maven plugins on a v10.1.1 sample.
