…p fix. Reflects current tests/ structure (wiki-* flows, common/functions, dismissGotIt subflow), updated browserstack.yml (WikipediaIOS app, accessibility scanning with testObservability: false, sharding with wiki-* flow names), and documents the zip-from-ios-level requirement.

Accessibility scanning added to ios/browserstack.yml. android/browserstack.yml synced with latest capabilities.
