Document how to run vMCP with optimizer locally

Context

After the optimizer is migrated into vMCP (toolhive issues stacklok/toolhive#3731–stacklok/toolhive#3733), users need a guide for running vMCP with the optimizer enabled in a local development environment.

Requirements

1. Document how to start vMCP locally with the optimizer enabled
2. Cover configuration of the EmbeddingServer dependency
3. Include a worked example showing FindTool in action with the optimizer
4. Document any required environment variables or config file settings

Acceptance Tests

• A user can follow the guide end-to-end and have a working local vMCP with optimizer
• The EmbeddingServer setup is clearly explained
• Configuration options for the optimizer are documented

Not sure this is required, since the deployment method we're focused on for vMCP is in Kubernetes, not local dev environments? Seems this would be better suited for in-repo docs targeting developers.
